Not an Afterthought
Most beach-cliff kitchens in North Goa treat vegetarians as an obligation: paneer tikka, a veg burger, fries. Dubki does something else. Fourteen of its starters are vegetarian, against eighteen non-vegetarian ones — and the veg section is where the kitchen does its most interesting work.
Look at what is actually there. Jackfruit scraped down until it reads like pulled meat. Goan xacutti masala — normally a slow-cooked pork or chicken curry base — folded into a mushroom samosa. Grated corn cooked into a Maharashtrian khees and served as chaat. Portuguese rissois of the kind Goan bakeries still make. A dim sum skin dyed with blue pea flower.
